Explore the plant-forward heart of the Mediterranean through three regions known for vibrant produce, simple techniques, and deeply rooted food traditions. In this educational tasting class, we’ll look at how Spain, France, and Greece each build flavor with vegetables, legumes, grains, spices and herbs. Students will enjoy guided tastings while learning approachable ways to bring Mediterranean brightness into everyday meals—no passport, and no kitchen work, required. Perfect for curious cooks who want to understand the “why” behind these timeless dishes and taste how each culture celebrates fresh, seasonal ingredients.
Lisa is a Fort Collins–based speaker, award-winning author, and plant-forward chef with a science-savvy, age-positive approach to feeling good through food. After forty years in healthcare, she now helps people cook with more confidence, curiosity, and joy—no perfection required.
Trained in everything from pasta-making in Italy to plant-based culinary arts, she blends real-life stories, gentle humor, and practical tips that make plant-forward eating feel doable. Her cookbook, Food ELEVATED, won a Gold Medal from the Colorado Independent Book Publishers Association.
